Purpose of the study: To investigate the effects of dairy cheese in the diet on cardiovascular health. Participation requires a series of visits over a 2-3 month period involving 4 different 8 day controlled diet protocols with 1-3 weeks in between diet protocols at your convenience.

Additional Inclusion Criteria:
- Nonsmoker
- No allergy to dairy cheese
- No illegal/recreational drugs
- No heart / blood pressure / cholesterol medications
- No birth control (pills, patches, shots, etc)
- No hormone replacement therapy
- Not pregnant or breastfeeding

Visit 1: Screening visit -1 hour
4 different 8 day controlled diet protocols which can be spaced 1-3 weeks apart at your convenience.
Visits 2-6 experiment visits -5 hours each will be on day 8 of each diet protocol
Visits 7-11 experiment visits -4 hours each will be on day 9 of each diet protocol
Participation does require additional brief visits to pick up food for each diet protocol.
